Chicken Broccoli Casserole
Ingredients
| 4 chicken breasts; debones (~2-2 1/2 lbs) , (up to 6) |
| 1 large packagefrozen broccoli spears |
| Topping: |
| 1 cupcheddar; shredded , (up to 1.5 cups) |
| 1.75 cupspanco or bread crumbs |
| -2 tablespoonButter; melted |
| Sauce: |
| 2 10-oz cansCampbell's Cream of Chicken Soup |
| 1 cupMayo |
| 1 tablespoonlemon juice |
| 2 teaspoonscurry powder |
Chicken Broccoli Casserole Preparation
-simmer chicken in salted water 8-10 min until done, cut into 1 inch pieces
-cook broccoli according to package directions, slightly underdone, cut into 1-2 inch pieces
-butter or spray casserole dish and lid edges to prevent sticking
-mix together sauce ingredients in medium mixing bowl
-place cooked broccoli on bottom of 2 quart casserole dish
-place 1/4 volume of mixed sauce over broccoli, spread over entire area of broccoli
-cover sauce with chicken pieces
-cover chicken with the rest of the soup mix
-top with cheese then the panco tossed in the melted butter
-cook at 400 for 45 min covered, then 5 min uncovered

it is very important to not cook the broccoli until done or it will get all soft when the casserole comes out of the oven. [I posted this recipe.]
