Original recipe makes 24
1 cupOatmeal; dry
1 cupWalnuts
1.5 cupsWhole wheat flour
0.5 teaspoonCinnamon
0.5 teaspoonNutmeg
0.5 teaspoonAllspice
1 teaspoonCardamom
1 teaspoonBaking soda
1 pinchSalt
2 tablespoonsLemon juice
0.5 cupCanola Oil
0.5 cupMaple syrup

Healthy Spice Cookies Preparation

Combine and set aside wet ingredients (lemon, syrup and oil).

Coarsely chop oatmeal and nuts in a food processor.

Combine remaining dry ingredients in a bowl.

Add the oat/nut mixture to the dry ingredients.

Add the dry ingredients to wet ingredients and mix thoroughly.

Shape into cookies.

Bake at 350 degrees for 15-20 minutes.

    Wonderful tasting....BUT....I made one batch exactly per recipe, and another batch adding chia seeds and dried cranberries. Both tasted amazing but they were both very dry and I did not overcook. Hubby complains they are dry but doesn't stop him from shovelling them in! lol).

    If anyone has any ideas on how to make this recipe more moist while keeping it vegan and not compromising or changing the taste, please post!!

    I'll try a banana next time I make it but I'm concerned it will compromise the taste and make it too banana tasting - I already make enough vegan cookies with banana - I am really hoping there's another way to make this one more moist using something that won't take away from the taste..
