1/4 cupLime juice
1/2 cupFresh cilantro; chopped

1 teaspoonChili powder

1/2 teaspoonSalt
1 poundChicken breast; skinless, boneless
1 bagTortilla chips
8 ounceSour cream
8 ounceSalsa
8 ounceBlack olives; sliced
2 Tomatoes; chopped
2 Avocado; sliced
4 ounceCheddar cheese; shredded
4 Lime; wedges
1 largeRomaine

Southwestern Grilled Chicken Salad Preparation

Make dressing ahead of time to marinate flavors. Refrigerate, but take out of refrigerator as chicken is grilling and let sit out to wait for salad.

To make dressing: Whisk together the 1/4 cup lime juice, 1/2 cup cilantro, 1 teaspoon of sugar, 1 tablespoon of chili powder, 1/4 teaspoon of ground cumin, 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Add 1/3 cup of oil in a light stream while whisking until emulsified.

In a small bowl, combine 2 tablespoons of oil, 2 cloves minced garlic, 1 teaspoon of chili powder, 1 teaspoon of ground cumin, 1 teaspoon of dried oregano and 1/2 teaspoon of salt. Brush all over sides of chicken to coat. Let marinate in refrigerator for an hour. Lightly oil the grate of your grill to prevent sticking. Grill chicken over medium heat until chicken is no longer pink, turning once. Once cooked, let chicken sit for 10 minutes to rest while preparing remaining salad ingredients. Once cooled or brought to warm, slice on the diagonal.

Take out any of your favorite corn tortilla chips, sour cream, salsa, black olives, chopped tomatoes, sliced avocado, shredded cheddar or mexican cheese, lime wedges, and romaine lettuce. Have fun with your Southwest Grilled Chicken Salad bar !

    The flavours were really nice, however it was a little too spicy to fully enjoy. I will make again but with less chilli powder.

    Absolutely delicious but about twice as much dressing as needed. I also found the dressing too tangy from the lime; will use about 2/3rds lime juice next time. I mixed the veg (minus lettuce) with the dressing, put the lettuce on the dish, veg on top and then chicken. I will also add corn and black beans next time, make it a heartier meal.

    I followed the directions as written but was disappointed with the end result. I dressing did taste good on the chicken but didnt taste edible on the salad. It had an overpowering flavor on the salad. I had high hopes but they were never reached. I believe the recipe needs to be reworked a bit.

    Great recipe. Only giving 3 star because of the dressing. It was very good on the chicken but gave the salad itself an odd flavor. Too much something, not enough something else? We haven't really figured it out yet.

    This was a little spicy but everyone liked it. We love garlic, so I added garlic to the dressing. I also added lime juice and cliantro to the marinade. The chicken would be good in fajitas or qusadillas.

    This was a great salad. I took out the olives and chips. I wanted something a little healthy so didnt do sour cream either. I added a little hot sauce to the dressing to give it a kick.
