Corn and Couscous Salad Preparation
Whisk together curry, mustard and vinegar. Season with salt and pepper. Whisk and drizzle in oil to emulsify.
Place couscous in bowl, pour in 1 c. boiling water. Stir and cover 5 minutes.
Heat 1 T. oil in skillet. Saute onion 4 minutes, add garlic, saute 2 minutes. Add corn and cook 2 minutes. Combine all.
