This recipe has always been a hit at potlucks for me.

Original recipe makes 6
2/3 cupWhite Rice; raw
1 14-oz canCorn; drained
1 14-oz canBlack Beans; drained
6 eachGreen Onions; sliced
1/4 cupJalapeno peppers; sliced
Dressing:
1/4 cupolive oil
1 tablespoonCider vinegar
2 tablespoonLime juice
1 teaspoonChili powder
1 teaspoonMolasses
1/2 teaspoonSalt
1/2 teaspoonCumin

Fiesta Salad Preparation

Cook rice in usual fashion and cool. Mix remaining salad ingredients in bowl. Whisk together dressing and toss to coat. Refrigerate 2 hours before serving.

    I love this dish. I didn't have onions, molasses, and cumin. But cilantro, onion powder, red peppers, and a little sugar made nice substitutes. I'll be making this frequently.
