This recipe is very close to your favorite Mexican restaurant's marinade. I let the meat marinade for an hour.

| 2 Boneless Chicken breast; or 3/4 lb top sirloin steak |
| 2 tablespoonsolive oil |
| 1 tablespoonLime juice |
| 1 clovegarlic; finely minced |
| 1/2 teaspoonChili powder |
| 1/2 teaspoonCumin |
| 1/2 teaspoonhot pepper flakes |
| 1/2 teaspoonBlack pepper |
| 1/2 teaspoonSalt |
| 1 green pepper |
| 1/4 tsCayenne pepper; or to taste |
| 1 spanish onion |
| 1 dashliquid smoke |
| 1 dashbalsamic vinegar |
| 1 dashsugar; to carmelize the meat |
Chicken Fajitas Or Steak Preparation
Slice chicken or steak into thin strips.
In bowl, mix together 1 tablespoons olive oil, lime juice, garlic, chili powder, cumin, hot pepper flakes, black pepper & salt, liquid smoke, and balsamic vinegar
Add beef strips and stir to coat, set aside.
Wrap tortillas in foil and place in 350 degree oven for 5-10 minutes or until heated through.
Cut onions in half lengthwise and slice into strips, cut your peppers into strips.
In large non stick grill pan or skillet over medium high heat, heat remaining tablespoons of olive oil.
Add onions & peppers stirring for 3-4 minutes, until softened; transfer to a bowl and set aside.
Turn the heat to high, add chicken or beef to skillet, cook, stirring for 3-4 minutes or until they lose their red color, add dash of sugar to carmelize. I like to let the meat char a bit
Return onions and peppers to skillet; stir for about one minute.
To serve, spoon a portion of the beef mixture down the centre of each tortilla, top with your desired toppings , fold bottom of tortilla up over filling, fold the sides in, overlapping.
