"Awesome. I made a couple of changes... I used 2/3 cup flour and 1 1/3 cups coarse cornmeal as we like that "corn" taste. Also, because I used the coarse cornmeal, I soaked it in the milk while preparing the other ingredients. Then I baked it in the oven in a greased cast iron skillet. Yummy. I had been looking for the taste of my childhood cornbread and now I have found it!"- Chillybones

Numomi2005 2 months agoPerfect and just the right amount of sweetness. I did reduce sugar to 1/2 cup. I usually have to add milk to cornbread recipe to thin it out, but not this time! This recipe made 12 perfect, fluffy, crisp on outside muffins. Thanks for sharing.

jetlajolla 7 months agoTastes great! The first time I made it was a little dry so the second time I used melted butter instead of oil and also baked in muffin pan (receipe makes 12 muffins). The results were much better! I served this with honey butter (I added the recipe to BigOven today).
