In a large bowl mix first 8 ingredients. Form into 4 balls, and flatten into patties.
Heat oil in large skillet over medium heat. Fry patties and onion in oil until patties are nicely browned, about 4 minutes each side. Remove patties to a plate.
Sprinkle flour over onions and dripping in the skillet. Stir flour with a fork, scraping bits of beef off of the of bottom as you stir. Gradually mix in the broth and sherry. Season with remaining seasoned salt. Simmer and stir over medium-low heat for about 5 minutes or until gravy thickens. Turn heat to low, return patties and add mushrooms to gravy, cover, and simmer for additional 15-20 minutes.
