Spicy Sweet Potatoes

This is a fun and spicy way to prepare sweet potatoes. I bought these fresh at my local farmers orchard. They are sweet, salty and spicy, all my favorit flavors and goes well with BBQ chicken.

Original recipe makes 4
6 smallsweet potatoes; peeled and cut into 1 inch cubes (about 6 cups)
2 tablespoonsolive oil or canola oil
2 tablespoonsBrown sugar
1 teaspoonChili powder
1/2 teaspoonSalt
1/4 teaspoonCayenne pepper
Butter; for drizzling

Spicy Sweet Potatoes Preparation

n a zip-top plastic bag, toss potatoes and oil.

Combine remaining ingredients; add to bag; toss to coat, let sit for 30 minutes

Transfer to a greased 11x7 inch baking dish.

Bake, uncovered, at 400 degrees for 40-45 minutes or until potatoes are tender, stirring every 15 minutes. Drizzle butter on in the end.

    This was awesome...and I even forgot the butter. Hubby wasn't crazy about them but I can't wait to eat them with my lunch tomorrow.

    These were pretty good. I would prefer them to be crispier though not sure if that's possible for sweet potatoes and I would like them spicier as well.

    This was a very nice variation on sweet potatoes. I used a chipotle chili powder which gave the dish a slight smoky flavor. Great dish!
