"Batter was great. For the fish, I used cod cut on the diagonal (important in getting the cod flaky) and dusted with seasoned flour (added a little cayenne pepper and Old Bay) BEFORE dipping in batter, it just makes sense. Beer Batter Preparation
1) Sieve flour & salt
2) Make a well & add liquid
3) Whisk
4) Add oil & lemon juice
5) Season
6) Allow to stand for 1 hour before use.
