This is a flavorful recipe with simple ingredients that I discovered after Thanksgiving last year when I was trying to find new uses for left-over turkey.

Original recipe makes 6
POPPY SEED DRESSING:
2 cupsmayonnaise
2 tbspdijon mustard
1/4 cuppowdered sugar
1 ozchampagne vinegar
1 ozwater
1/2 tspblack pepper; ground fine
1/2 tsppoppy seeds
2 tspkosher salt
SALAD:
1 lbrotelle pasta
1 tbspolive oil
8 ozturkey
3 ozdried cherries
1/2 medium; diced
1/2 medium; diced
1/2 wholealmonds

Turkey and Dried Cherry Pasta Salad Preparation

1. Mix together all the ingredients for the dressing completely; set aside.

2. Cook the pasta al dente, drain, toss in olive oil and cool completely.

3. Combine pasta, turkey, cherries, celery and half of the almonds in a large bowl. Mix in dressing to desired consistency. Taste for salt and adjust if necessary.

4. Transfer to a serving dish and top with the remaining almonds.

I love the tangy zing of this creamy pasta salad. It's great to use up leftover turkey after Thanksgiving, but also an excellent light lunch during the warm Summer months. You could use chicken instead of turkey if you want to. I use real mayo and NOT salad dressing in this recipe. I hope you enjoy it as much as I do. [I posted this recipe.]
