Turkey and Dried Cherry Pasta Salad

This is a flavorful recipe with simple ingredients that I discovered after Thanksgiving last year when I was trying to find new uses for left-over turkey.

| POPPY SEED DRESSING: |
| 2 cupsmayonnaise |
| 2 tbspdijon mustard |
| 1/4 cuppowdered sugar |
| 1 ozchampagne vinegar |
| 1 ozwater |
| 1/2 tspblack pepper; ground fine |
| 1/2 tsppoppy seeds |
| 2 tspkosher salt |
| SALAD: |
| 1 lbrotelle pasta |
| 1 tbspolive oil |
| 8 ozturkey |
| 3 ozdried cherries |
| 1/2 medium; diced |
| 1/2 medium; diced |
| 1/2 wholealmonds |
Turkey and Dried Cherry Pasta Salad Preparation
1. Mix together all the ingredients for the dressing completely; set aside.
2. Cook the pasta al dente, drain, toss in olive oil and cool completely.
3. Combine pasta, turkey, cherries, celery and half of the almonds in a large bowl. Mix in dressing to desired consistency. Taste for salt and adjust if necessary.
4. Transfer to a serving dish and top with the remaining almonds.
