Original recipe makes 6
| 2 poundsPotatoes |
| 1/2 cuplow fat mayonnaise |
| 2 tablespoonTarragon Vinegar |
| 1 tablespoonDijon mustard |
| 1/2 teaspoonSalt |
| 1/4 teaspoonBlack pepper |
| 1/4 teaspoonTarragon |
| 1/4 cupGreen onion; diced |
| 2 tablespoonParsley; diced |
Jim's Tarragon Potato Salad Preparation
Place potatoes in water, covering to 2 inches above potatoes. Bring to a boil. Simmer 20 minutes. Cool, drain, peel and cube.
Mix together mayo, vinegar, mustard, salt, pepper and tarragon. Add to potatoes and toss.
Add onion and parsley and toss again.
Chill.
