I found this recipe on another recipe website and I couldn't believe how good these are considering how healthy they are. They came out very moist and full of flavor.

Top-ranked recipe named "Low-fat High Fiber Blueberry Bran Muffins"
Preheat oven to 375 degrees.
Grease muffin cups or use paper muffin liners.
Mix together wheat bran and milk, and let stand for 10 minutes. (I didn't do this and muffins turned out fine.).
In a large bowl, mix together applesauce, egg, brown sugar, and vanilla.
Beat in bran mixture.
Sift together all-purpose flour, whole wheat flour, baking soda, baking powder, and salt.
Stir into bran mixture until just blended. Fold in blueberries.
Scoop into muffin cups.
Bake in preheated oven for 15 to 20 minutes, or until tops spring back when lightly tapped.

sarahhofforth 6 months agoThese turned out wonderful. I stuck to the recipe and cooked them for a full 20min so they were not underdone. Wheat bran and Grape nut cereal are not interchangeable in regards to previous comment.

Lafoley83 1 year agoI made them and they turned out great! One question though, they were so moist they were almost wet and I think it might have something to do with the blueberries? I'd like to make them again but would like them to be a bit more dry next time. Suggestions?

nikkimarie1020 1 year agoVery tasty muffins! I didn't have blueberries, so I used chopped fresh strawberries instead, and the muffins still turned out great! Very moist and delicious--they didn't even need butter in my opinion.

LisaMommy 2 years agoMade these today. They turned out ok. I have no idea what wheat bran is so I used Grape Nuts cereal. They were a bit gritty but still turned out ok. If u can tell me what wheat bran is I will try this recipe again to try to improve the next batch.
atenette1 4 years agoThe perfect recipe! I used dried cranberries instead of blueberries, with terrific results. Next time I plan to use dried blueberries, since I always have them on hand anyway.
