Ravioli with Pumpkin Sauce

A cheese ravioli served with a pumpkin sauce and garnished with toasted pumpkin seeds. A great dish to welcome Autumn!

Ingredients
| 2 cupscooked pumpkin |
| 1 cupwater or chicken broth |
| 2 tablespoonsdry sherry |
| 0.5 teaspoonkosher salt |
| 0.25 teaspoonfreshly ground black pepper |
| 1 poundcheese ravioli |
| 2 tablespoonstoasted pumpkin seeds; for garnish |
Ravioli with Pumpkin Sauce Preparation
Bring a pot of salted water to a boil for cooking ravioli and cook as directed.
Meanwhile place the cooked pumpkin in a small pot, add water, sherry, salt and pepper. When the mixture is heated through, puree, adjust consistency and keep warm.
Drain cooked ravioli and serve with sauce. Garnish with the toasted pumpkin seeds.
