A cheese ravioli served with a pumpkin sauce and garnished with toasted pumpkin seeds. A great dish to welcome Autumn!

Bring a pot of salted water to a boil for cooking ravioli and cook as directed.
Meanwhile place the cooked pumpkin in a small pot, add water, sherry, salt and pepper. When the mixture is heated through, puree, adjust consistency and keep warm.
Drain cooked ravioli and serve with sauce. Garnish with the toasted pumpkin seeds.

weckle 4 years agoAny type of Winter squash may be used in place of the pumpkin such as Acorn or Butternut. [I posted this recipe.]
