BLT Grilled Chicken Salad

Ready in 20 minutes

I've always loved a great BLT in the middle of summer when the tomatoes are nice and ripe. Here is an even healthier way to still get your "BLT fix", by eating it in the form of a salad. All of the same tastes, but less calories !

Ingredients

2 Chicken breasts
1 teaspoon Mayonnaise
1 pinch Pepper
2 Tomatoes; chopped
6 slices Bacon; cooked, crumbled
2 head Romaine; chopped
2 Eggs; hard boiled, sliced
1 cup Croutons
1 1 -- Dressing --
1 clove Garlic
0.75 cup Mayonnaise
0.5 cup Milk
0.25 teaspoon Salt
0.25 teaspoon Black Pepper; freshly ground

Preparation

Lightly brush chicken breasts with teaspoon of mayonaisse and pinch of pepper. Grill on a greased grill for 5 to 7 minutes per side or until thoroughly cooked, but still juicy. Set aside to cool and then slice in thin strips.

To make creamy dressing: In a blender, place 3/4 cup mayonaise, 1/2 cup milk, 1 clove garlic, 1/4 tsp of salt and 1/4 tsp of pepper. Blend until creamy.

To prepare salad: In a medium salad bowl, layer romaine lettuce, grilled chicken, tomatoes, bacon, eggs and croutons. Serve with creamy dressing on the side, so that everyone can put their own amount.
