Original recipe makes 4
1 tspSalt
1 tsppaprika
1/2 tspground cumin
1/4 tspOld Bay
1/4 tspgarlic powder
1/4 tspdried thyme
1/4 tspdried oregano
1/4 tspdry mustard
1/8 tspfresh pepper
1/8 tspcayenne pepper
1/2 stickunsalted butter
4 6-ozfillets
4 limes; halvesd

Not Quite Blackened Tilapia Preparation

Combine all the ingredients for the spice mixture in a small bowl. Melt butter in separate bowl. Heat a heavy nonstick skillet over high heat for 5 mins. Meanwhile, dip the fish fillets in the butter. Sprinkle them all over with the spice mixture.

Reduce heat very slightly and sear the coated fish, 2 fillets at a time until very dark brown and crispy, 2 mins per side. Repeat with the remaining 2 fish fillets. Serve immediately, garnished with lime halves.

This has a salty chili flavor to it that can be subdued a bit by reducing the CUMIN to 1/4 tsp, reducing the SALT to 1/4 tsp, and adding 1/2 tsp of SUGAR. [I posted this recipe.]
