Ginger Steamed Chicken with Snow Peas Preparation
Cut the chicken into 3’’ x ½’’ strips. Marinate in lime/lemon juice them while trimming snow peas, scallion (white & green parts sliced finely), and parsley.
Bring water, salt & ginger to boil in skillet. Add chicken, lowering the heat to medium, and simmer covered for 5 minutes. Place snow peas, (bean sprouts, mushrooms, baby corn) over chicken, cover again & cook until crunchy (3-4 minutes). Serve in shallow bowls over brown rice with juices. Top with scallions and parsley & serve with lemon/lime wedge.
