What a lovely dish we had this in Texas and I just had to get the recipe, I used bribery of course it cost me a few shots of good bourbon

Original recipe makes 4
32 ouncesSnapper fillets; four each weighing between 6 to 8 ounces
1 tablespoonPaprika
1 tablespoonCayenne pepper
1 teaspoonBlack Pepper; ground
1 teaspoonGround White Pepper
1 teaspoonGround cumin
1/2 teaspoonThyme
1/2 teaspoonOregano
1 teaspoonSalt
4 tablespoonButter; melted

Blackened Snapper Cajun Style Preparation

Mix well together the spices and seasonings.

Dip the snapper in melted butter and sprinkle on the Cajun spice,

Pan Fry over a medium to high heat until just cooked.

Notes

We like to serve this with a mixed green salad and a spicy salsa.
