Premium Chocolate, Pumpkin and Kahlua meet for a taste of indulgence !
Toast almonds at 350 degrees for 5 minutes to lightly toast them. Take out and set aside to cool.
In a food processor or closed zippered bag, crush vanilla wafers and almonds until completely crushed and turn to crumbs.
Melt chocolate morsels over a double boiler and set aside.
In a medium bowl, combine the vanilla wafer crumbs, almond crumbs, 1/2 cup of the sifted powdered sugar and cinnamon. Mix dry ingredients together. Add the canned pumpkin, melted chocolate and Kahlua to the dry ingredients and stir until all moistened.
Using your hands, roll mixture into 1 inch balls andlay out on a platter. Chill the platter. Once chilled, sprinkle the remaining 1/4 cup of sifted powdered sugar on the truffles and enjoy !
* When baking, I always use a good quality chocolate with a high cocoa content, such as Ghirardelli. Your end product will always taste so much better.
*A double boiler is essentially, placing your ingredients to be melted in a small mixing bowl and setting that bowl over a smaller pot with a small amount of water at the bottom. Be sure not to let the bowl touch the water. Slowly heat up the pot so that it forms a small amount of steam. This will allow the chocolate to melt slowly, and not burn.
