Ingredients
| 2 1/2 cupsAll purpose flour |
| 2 cupsGranulated sugar |
| 1 tablespoonPumpkin pie spice |
| 1 teaspoonBaking soda |
| 1/2 teaspoonSalt |
| 2 Eggs; lightly beaten |
| 1 cupCanned pumpkin |
| 1/2 cupVegetable oil |
| 21 ounceApple pie filling; blended |
| -- Streusel Topping -- |
| 4 tablespoonAll purpose flour |
| 1/2 cupSugar |
| 1 teaspoonGround cinnamon |
| 8 teaspoonUnsalted butter |
Pumpkin Apple Streusel Muffins Preparation
Preheat oven to 350 degrees F. Grease or paper line a muffin tin and set aside.
Make streusel topping by cutting in 8 teaspoons butter into dry ingredients until mixture is crumbly. Set aside.
In a large mixing bowl, combine flour, sugar, pumpkin pie spice, baking soda and salt. Mix to combine.
In a separate mixing bowl, beat eggs lightly. Add pumpkin, oil and blended apple pie filling to egg mixture. Once liquid ingredients are mixed throroughly, add this to your dry ingredients and mix just until all is moistened.
Pour batter into prepared muffin tin until 3/4 full in each muffin cup. Top each with streusel topping and bake in oven for 35-40 minutes or until a toothpick inserted into the center comes out clean. Take out of oven and let sit for 1-2 minutes. Then transfer muffins to a wire rack to finish cooling.
