I found these on an internet website. The sunflower seeds make these taste wonderful, you will not miss the meat at all.

1/2 cuplong-grain rice; (preferably brown)
1 teaspoonSalt
4 largesweet peppers; (preferably red)
3 tablespoonsButter or margarine
1 mediumOnion; chopped
1/2 cupcelery; finely diced
1 carrot; finley chopped
1/2 cupsunflower seed
1/4 cupparsley; minced
2 Eggs; (or equivalent egg substitute) slightly beaten
1/4 teaspoondried oregano leaves; crumbled
1 jalapeno pepper; chopped
1 teaspoonBlack pepper
1/2 cupsharp cheddar cheese; shredded

Vegetarian Baked Stuffed Red Bell Peppers Preparation

Directions

Cook rice in 1-1/2 cups boiling salted water for 35 minutes or until tender.

Drain if necessary.

Set aside. Cut peppers in half.

Remove seeds and white membrane. Parboil peppers in boiling salted water for 5 minutes.

Arrange in slightly oiled, shallow 1-1/2 quart baking dish.

Melt butter in small skillet. Add onion, celery, and sunflower seeds.

Saute until onion is tender.

Remove from heat. Stir into rice. Add parsley, eggs, oregano, jalapeno pepper, black pepper, and salt to taste. Fill peppers with mixture. Sprinkle cheese on top.

Put about 1/3 cup hot water in bottom of dish.

(I use the water used to parboil the peppers.) Bake at 400 F for about 20 minutes.

My husband said it was fair. Neither I nor my daughter could finish half for ours. We just didn't like it. It was good enough my husband ate the leftovers for lunch the next day :)

Very good, healthy and delicious. On the preparation it doesn't say when to add the carrots. I sauteed them with the onions, celery and sunflower seeds.
