This is one of those chocolate chip cookie recipes that could be handed down from generation to generation. They are that perfect mix of crunch on the edge with a chewy melt in your mouth center.
Preheat oven to 375° F (190° C).
Beat butter and sugars until light and fluffy using a stand mixer on medium setting. Add eggs and vanilla and beat for an additional 2 minutes on medium setting.
Mix flour, baking soda and salt. Add flour mixture to butter and sugar mixture. Mix on medium low setting until combined. Stir in chocolate chips and rolled oats by hand.
Drop 1/4 cup of dough per cookie on to un-greased, parchment lined cookie sheet 2 in" apart. Bake for 12 to 14 minutes, or until the edges are golden brown and the surface is slightly cracked.
Allow to cool for 2-3 minutes before transferring cookies to a cooling rack.
