Broccoli and sweet onion are roasted at a high temperature to bring out the natural sugars of the vegetables.

"I really liked the fact that it went together so quick and easy. I didn't have much time so when the first 20 min. was finished the fish went in and the meal was ready in no time. It looked great and tasted just as great."

Nice way to have broccoli and it kept its colour as well.

Excellent flavor! Only criticism is that some of the veggies burned a bit, so 20 minutes without stirring/turning ended up being a bit too long, at least for my oven. In spite of that, still a very tasty dish.

Delicious and Healthy! Love the thought of not drenching the vegetables in butter. Will definitely make again. Thank You!

Delicious! So crisp and light! We added some minced garlic and chili powder to the olive oil and tossed the onions and broccoli in the mixture.

Oven temperatures vary. When using high temperatures to roast vegetables, check often to avoid burning. [I posted this recipe.]
