Preheat oven to 450 degrees.
Meanwhile spread the broccoli florets in a single layer, on a baking sheet. Distribute the onion slices evenly over the broccoli. Drizzle the oil, add the salt and pepper and toss to evenly coat the vegetables.
Roast for about 20 minutes. Toss the vegetables and return to the oven for another 5-10 minutes until tender.
Serve hot or at room temperature.
janglin28 2 weeks agoGreat recipe! Used garlic infused olive oil. So far it has become my favorite way to prepare broccoli. I love the crunch it added to the usually bland vegetable without burning.
singleguy55 6 months agothis was a good dish. With only a couple ingredients this was certainly simple and quick to do. I added some shredded cheese and melted it on top for a little extra flavor.

Stephielulu 1 year agoExcellent flavor! Only criticism is that some of the veggies burned a bit, so 20 minutes without stirring/turning ended up being a bit too long, at least for my oven. In spite of that, still a very tasty dish.

Amyo031503 3 years agoDelicious! So crisp and light! We added some minced garlic and chili powder to the olive oil and tossed the onions and broccoli in the mixture.
