Roasted Broccoli and Sweet Onion

Broccoli and sweet onion are roasted at a high temperature to bring out the natural sugars of the vegetables.

Ingredients

1 bunch broccoli; about 1 1/2 pounds, cut into florets, stem peeled and sliced
1 large sweet onion; peeled and cut into thick slices
2 tablespoons extra virgin olive oil
1 teaspoon kosher salt
1/2 teaspoon Black Pepper; freshly ground

Preparation

Preheat oven to 450 degrees.

Meanwhile spread the broccoli florets in a single layer, on a baking sheet. Distribute the onion slices evenly over the broccoli. Drizzle the oil, add the salt and pepper and toss to evenly coat the vegetables.

Roast for about 20 minutes. Toss the vegetables and return to the oven for another 5-10 minutes until tender.

Serve hot or at room temperature.

Great recipe! Used garlic infused olive oil. So far it has become my favorite way to prepare broccoli. I love the crunch it added to the usually bland vegetable without burning.

this was a good dish. With only a couple ingredients this was certainly simple and quick to do. I added some shredded cheese and melted it on top for a little extra flavor.

Loved it just finshed making it added minced garlic to mines and when it was down added some brown sugar turned out GREAT!!! Uploaded a pic too

Excellent flavor! Only criticism is that some of the veggies burned a bit, so 20 minutes without stirring/turning ended up being a bit too long, at least for my oven. In spite of that, still a very tasty dish.

Delicious! So crisp and light! We added some minced garlic and chili powder to the olive oil and tossed the onions and broccoli in the mixture.
