Original recipe makes 12
1 poundmonterey jack cheese; shredded
2 cupsham; finely diced
1/2 cupFlour
1 teaspoonBaking Powder
1 dozenEggs; slightly beaten
1 pintcottage cheese; small Curd
Pepper
5 dashesTabasco sauce
1/2 cupButter; melted
Optional:
1 green pepper
1 green onion

Baked Ham Omelet Preparation

Put half of the melted butter in 13 x 9 x 2 baking dish. Sift flour and baking powder and mix with ham and cheese. Add remaining 1/4 cup butter to eggs, cottage cheese and seasonings. (These two mixtures can be made the night before). Mix egg mixture with ham and cheese. Pour over melted butter in dish. Bake at 400 for 20 minutes, then at 375 for 15 minutes, or until knife inserted in center comes out clean.
