Heat oil in skillet over medium-high heat. Add chopped onion and saute, stirring until fragrant and translucent but not browned. Whisk in flour and cook, stirring, 1 minute. Add milk, whisking, and add thyme, salt and pepper. Cook until thickened, not quite as thick as sour cream. Stir in turkey, peas and mushrooms if desired. Warm through.
Slice puff pastry into 8 equal pieces and place on lightly greased, foil-lined baking sheet. Divide turkey mixture into 8 portions and spoon each portion onto one corner of puff pastry square. Fold over to make triangle and press down edges with fork to seal.
Bake at temperature recommended on puff pastry package (375 - 400) for 15-20 minutes, until golden brown and flaky.
