Original recipe makes 4
3 tablespoons ofButter
1 headcauliflower; small
1 cuphalf and half cream
0.125 teaspoonblack pepper
2 tablespoonscheese; your choice (try using lots!)
1 mediumOnion; chopped
4 cupschicken broth
0.25 teaspoon ofSalt

Cauliflower Soup Preparation

Melt butter in 3-qt saucepan over moderate heat, add the onion and cook uncovered for 5 min. or until soft

Meanwhile separate the cauliflower into florets, then chop florets into 1/2" pieces (Whatever)

Add cauliflower and chicken broth to the onion in the pan. Cover and simmer about 10 min. or until the cauliflower is tender.

Add the half and half, salt and pepper and heat until the soup returns to a simmer. Sprinkle each serving with some of the cheese
