Portuguese Bean Soup and Filet

Great hearty soup that will fill up the hungriest eater.

| 1 White onion |
| 2 stalksCelery |
| 2 Carrots |
| 1 tablespoonFlour |
| 3 tablespoonsTomato puree |
| 1/2 headCabbage |
| 2 cupsKidney beans; rinsed |
| 1 teaspoonGarlic |
| 1 Ham; butt end |
| 8 cupsChicken Stock |
| 1 teaspoonHerbs; basil, oregano, parsley |
| 3 Bay leaf |
| 6 Smoked sausages; spicey, grilled and cut up |

| 2 tablespoonsBalsamic vinegar |
| 2 tablespoonsolive oil |
| 1/2 teaspoonHot sauce |
| 2 tablespoonsOlives |
| 2 tablespoonsMustard |
| 4 8 ounceSteak filets |
Portuguese Bean Soup and Filet Preparation
Combine all ingrediants for filet marinate and blend well. Lay filets on platter and pour marinate over them, coating evenly. Allow a marinate time of at least 30 - 45 minutes.
In large stockpot heat olive oil and stir in onion, celery and carrots. Stirring frequently until onion becomes transparent. Now add flour and tomatoe puree blending well. Once blended add remaining ingredients, except for sausage. Bring mixture to a boil and then add sausage. Boil for 5 minutes and bring down to a simmer for at least 45 minutes. When you get to within 20 minutes of your total cook time is when the grill will need to be preheated. Once grill is good and hot place filets on grill. Grill 4- 6 minutes per side.
Served great with grilled mushrooms. Bowl up the soup, serve the filet and enjoy a 4 star meal that even the in-laws would be proud of.
