A chipotle and salt rubbed chicken that is cooked in the crock pot.
Remove giblet and neck from chicken, rinse and pat dry. In a small bowl, mix together the chipotle and salt. Sprinkle this mixture all over the chicken. Spray all sides of the chicken with cooking spray. Before placing the chicken breast side up in the crock pot, place crumbled up aluminum foil on the bottom of the pot. The idea is to hold the chicken up so it does not cook in it's own juices.
Cook on high setting for 4-6 hours.
