Asian Beef and Noodles
|1 tablespoonVegetable oil|
|1 poundGround beef|
|1 Green Pepper,; seeded and thinly sliced|
|4 Scallions,; trimmed and thinly sliced|
|2 tablespoonGinger,; finely chopped|
|1 cloveGarlic,; finely chopped|
|1/4 teaspoonRed pepper flakes|
|3 tablespoonStir-fry sauce|
|3 tablespoonLime juice|
|8 ouncesSpaghetti; , fiber and calcium enriched preferable|
Asian Beef and Noodles Preparation
1. Bring a large pot of lightly salted water to a boil.
2. In large skillet, heat oil over medium high heat. Add beef and cook for 6 minutes or until no longer pink.
3. Add green pepper, scallions, ginger, garlic, red pepper flakes and sugar to skillet: cook for 5 minutes, stirring occasionally. Turn off heat and stir in stir-fry sauce and lime juice.
4. While beef is cooking, prepare spaghetti following package directions. Drain and add to skillet with beef mixture. Toss to combine.
Per serving: 404 calories; 10 g fat (3 g sat.); 32 g protein: 52 g carbohydrate; 7 g fiber; 481 mg sodium; 70 mg cholesterol.
You can use any meat in this recipe or even tofu. The secret ingredient is the ginger. It is fast, easy and all my kids will eat it!
