This is a deliciously moist cake that everyone will love. The recipe is quite easy and can be made in about 1 hour including cooking time!

3 cupsall-purpose flour
3 cupsGranulated Sugar
1 teaspoonSalt
1 1/2 teaspoonsbaking soda
1 teaspoonbaking powder
2 1/2 teaspoonsground cinnamon
1 teaspoonvanilla extract
4 Eggs
1 1/2 cupsVegetable oil
3 cupsgrated carrots
1 jarDuncan Hines Whipped Cream Cheese Frosting

Carrot Cake Preparation

Preheat oven to 325 degrees. Lightly grease and flour 9 x 13 pan. In a medium size bowl combine the flour, baking soda, baking powder, cinnamon, white sugar, and salt.

In a large bowl beat eggs, vegetable oil, and 1 teaspoon vanilla. Add in dry mixture slowly and mix well.

Stir in the shredded carrots. Pour batter into prepared pan.

Bake at 350 degrees F for 40 minutes. Check for doneness with a tooth pick. Allow cake to cool in pan. Once cool frost and enjoy!

Soooooooo.. apparently for some reason, when you hit the 'print' button on the right under the 'share' section, Big Oven increases the vegetable oil to 7 CUPS! I made this, according to directions I printed, but added 1 cup each of sugar and flour to try to offset it. I was scratching my head as to the amount of oil... I knew it was bad before I baked it- but BOY was it bad afterwords! I have no idea why the oil was the only ingredient that was changed? Now I get to try and make it all over again, with a bit less oil.. Big Oven FAIL. The recipe is simple enough, when it's correct though!

You can also bake this into a layer cake. Just use three 9”pans, adjusting the temp to 325 degrees for 25 minutes; then layering frosting between them [I posted this recipe.]
