Excellent cold salad for picnics or general summer days

| 2 cupUncooked orzo |
| 2 cupBaby spinach; chopped |
| 1/2 cupSun-dried tomatoes; chopped |
| 3 tablespoonRed onion; diced |
| 3 tablespoonKalamata olives; pitted and chopped |
| 1/2 teaspoonBlack Pepper; freshly ground |
| 1/4 teaspoonSalt |
| 6 ounceMarinated artichoke hearts; chopped |
| 3/4 cupFeta cheese; crumbled |
Mediterranean Orzo Salad Preparation
1. Cook the orzo according to package directions, omitting salt and fat.
2. Drain the orzo and rinse with cold water.
3. Combine the orzo with the rest of the ingredients in a large bowl.
4. Add as much of the marinade from the artichoke hearts container and sun-dried tomatoes as desired.
Notes
Ingredient amounts are suggestions only. Add as much of each ingredient as wished, omit ones you don't want, and add new ones
