Citrus Chicken Satay with Peanut Sauce

Recipes »  Main Dish  »  Poultry - Chicken

This chicken is marinated in peanut oil and lime juice and then put under a hot broiler. It goes very nicely with the peanut sauce and pineapple fried rice on the side.

"I do agree with the last comment in the sense that it is a very mild dish. It is more catered to those with a low heat tolerance and for serving to kids. I have increased the chile peppers to 2 in the recipe, and then please add salt and pepper, to taste, of course. If you like your dishes spicy, you can most certainly add as many of the chile peppers as you wish, to add more heat to the dish." - CookingPassion

Original recipe makes 4
2 tablespoonPeanut oil
1 tablespoonSesame Oil
Juice from 1/2 lime
2 Chicken breast; skinless, boneless
1 -- Peanut sauce --
1 tablespoonPeanut oil
1 smallOnion; finely chopped
1 smallGreen chile peppers; seeded and chopped
1 cloveGarlic; finely chopped
0.5 cupCrunchy peanut butter
6 tablespoonWater
Juice from 1/2 lime
Salt and pepper; to taste

Citrus Chicken Satay with Peanut Sauce Preparation

Cut the chicken into 1 inch cubes and set aside. Combine both the oils and the 1st lime juice in a non-metallic dish. Add the chicken to the bowl, cover with plastic wrap and let marinate in refrigerator for 1 hour.

Presoak 8-12 bamboo skewers in water to prevent scorching when baking.

To make the peanut sauce, heat the oil in a small pan and saute the onion, chile pepper and garlic, stirring occasionally for about 5 minutes, or until softened. Add the peanut butter, water and lime juice, stirring constantly until the peanut butter has a sauce consistency. Transfer to a bowl and set aside.

Drain the chicken cubes and season them to taste with salt and pepper. Thread onto the bamboo skewers. Broil for about 10 minutes or until cooked throughout. Serve hot with the warm peanut dip.

This recipe was easy to make, however it was completely bland. The peanut sauce was also very bland.

This was easy to make and delicious. Next time I make it, I will use less peanut oil in the sauce (maybe 1 Tbs instead of 2), as it was a little oily. The flavor was great, though. Don't cook the sauce too long or it will start to fall apart -- remove from heat as soon as it's nice and creamy.
