Eat with hot sauce for a truly southern flair. For a healthier version, leave out the bacon and adjust seasonings accordingly.
Wash and pick through greens carefully. Fresh collards will require multiple washes and rinses. Remove stems and any bruised or discolored leaves.
Tear greens into medium pieces.
Cook bacon in sturdy pot or frying pan. In pot, heat bacon drippings and olive oil. Add bacon, turkey drumstick, onion and garlic. Cook about 2 minutes, stirring frequently. Add chicken broth and spices and simmer for 30-45 minutes. Add collard greens and vinegar and simmer for 2 hours or until very tender.
