Chop tomatoes roughly and put them in a mini food processor, then add the minced garlic, the chopped basil or oregano, 1 tbsp of the olive oil, and vinegar, salt and pepper. Brush bread lightly with the rest of the olive oil and place over hot grill or under broiler until golden on each side. Put tomatoes, garlic, and oregano or basil in bowl. Spoon tomato mixture over each bread slice. and serve.

NellyO 1 year agoThese were real good, spot on flavors and everyoneone ate em right up. I do a lotta brunches, and this does the trick wonderfully. I totally love your photo too-looks so appetizing!
