gatun 2 months agoAfter many requests, I made the Super Simple Meatloaf again. This time I used corn bread stuffing bread crumbs. My family thought it was excellent. So switching up the type of bread crumbs can give it a new twist.
melarky 2 months agoYeah, our family loves this meatloaf too. When ground meat goes on sale, we will often make big batches of this this, and then we form it into those little disposable tin mini loaf pans (we pick them up at the dollar store, usually have a pack of 5 or so for a buck), and stick them all in the freezer. The reason we use the mini loaf pans is because you can cook those right from frozen (if you use the large regular size loaf pans in the freezer, you have to defrost the meatloaf the night before you want to use it so that the meatloaf cooks all the way through, if you cook a regular loaf from frozen it burns on the outside and is raw in the middle). We just stick a couple of the mini loafs in the oven to have enough for our family, so it's a nice quick meal. We also found that when they are the mini loaf size, they cut up for the perfect size to fit Walmarts french bread. I'm not a huge fan of some of walmarts stuff (I haven't been impressed with their meat or produce), but their french bread is really good (crusty on the outside and chewy on the inside). They sell a herbed/parmesan one that makes awesome meatloaf sandwhiches that our boys gobble up (just put a little mayo on the bread with some salt and pepper, it's great).

DebMcC 5 months agoDidn't have Manwich sauce at home so I used chopped canned tomatoes and ketchup. Also added cheese cubes. Still turned out great! The Stovetop Stuffing works well

melarky 4 years agoWe actually buy the small cheap disposable loaf pans (like half the size of normal loaf pans) and then triple this recipe and place the mix into the mini loaf pans covered with aluminum foil, and freeze them. You can then pop them right into the oven frozen and they will cook up great (really handy to have on hand). I think if you used a full size loaf pan, you would have to thaw the loaf before cooking, but because we use the mini loaf pans, it works great this way (and we can just pop 2 in the oven if we think we need extra). We will sometimes just make this recipe just to make meatloaf sandwhichs (walmart french bread is great with it, that kinda chewy french bread). It makes it nice to switch up the standard mashed potatoes and gravy with the meatloaf and my family loves it. [I posted this recipe.]
