Easy to make, very filling, great way to use up leftovers. Also great using roasted chicken from the grocery store deli, & egg noodles instead of stuffing.

"We just had this and oooh my it is sooo good! We used leftover stuffing and turkey. I also added 6 cloves of garlic. Our stuffing was homemade with sweet and spicey elements and I was a bit worried about how the flavors would marry, but it ended up being so flavorful I can't wait to not be full anymore so I can have another bowl! Husband loved it too. Someone stopped by while we were eating and said how good the house smells. This recipe is definitely a favorite addition to the leftover recipe collection. Original recipe makes 8
6 cupsprepared stuffing
1 tablespoonolive oil
2 cupsbaby carrots; chopped
2 ribscelery; chopped
1 Onion; chopped
1 bay leaf
2 quartschicken stock
1 1/2 poundscooked turkey; diced
0.5 bunchflat leaf parsley leaves; chopped (optional)

Turkey & Stuffing Soup Preparation

• Preheat oven to 350

• Place stuffing in greased muffin (or regular) pan. Heat for 10-15 minutes

• Heat olive oil in pot over medium heat

• Add carrots, onions, & celery to pot as you chop. Season with salt & pepper

• Add bay leaf & chicken stock. Bring to a boil

• Add chicken/turkey & simmer until raw vegetables are tender, about 10 minutes

• Place stuffing balls in bowls, ladle soup around stuffing
