A Thai Style Fried Rice with pineapples. Yummilicious! Good enough to eat it on its own.

Ingredients

Are you making this? 
1 cup of white rice; cooked
0.25 cup pineapple; cut into small cubes
1 tbsp oil
cubes
1 tbsp Butter
0.25 tsp curry powder
cubes
0.5 red onion; chopped coarsely
2 tbsp raisins
0.5 tsp Sugar
1 tbsp light soya sauce

Preparation

Heat oil in wok & add in the sausages. Stir fry for a minute & dish up. Set aside.

Add the butter & curry powder to the wok and fry till fragrant.

Add the cooked rice & mix well.

Add the rest of the ingredients & stir fry for a few minutes.

Add seasoning & mix well. Dish up & serve the pineapple rice in the hollow out pineapple.

Top the pineapple fried rice with some pork floss if desired. (I did!)

For a more impressive presentation, cut a fresh pineapple lengthwise in halves. Remove the flesh & hollow out the pineapple. Keeping some for the pineapple flesh for the fried rice. You can keep the rest for other uses. [I posted this recipe.]
