A very easy and good chicken casserole

"A staple in the South, Poppy Seed Chicken casserole is, in my opinion, an incredibly tasty and comforting main dish. This version is practically identical to the recipe that both my maternal grandmother and aunt Peggy used. It's a delicious dish that can be whipped up in a snap and was one of their go to recipes for whenever they had leftover chicken or turkey to use up. We served this delicious casserole with steamed brown rice and a green leafy salad for a tasty meal." - sgrishka

Original recipe makes 6
6 chicken breasts; (up to 8), chopped, cooked
1 1/2 cupsour cream
1 cancream of chicken soup
1 stackritz crackers; crushed
1 stickMargarine; melted
1/4 cuponion; finely chopped
1 teaspoon ofbell pepper; finely chopped
poppy seeds; (optional)

Poppy Seed Chicken Preparation

Mix sour cream, onion, soup and bell pepper.

Put chopped chicken in 9x13 ovensafe dish

Cover chicken with sour cream mixture.

Spread crushed ritz crackers over top and cover with poppy seeds and melted butter.

Bake at 350 for 30 minutes or until bubbly.
