Fresh Crisp Calamari Salad

Cold tender rings of calamari, blanketed in olive oil and lemon with the sharp bite of olives, red onion and garlic. Refreshing and light for a warm day filled with sunshine.

Original recipe makes 4
1 lbCalamari; cleaned and cut into rings
0.25 cupgood cold pressed olive oil
0.25 cupfresh squeezed lemon juice
2 clovesgarlic; diced or crushed
1/4 red onion; diced
1 red tomato; diced
1/2 cupsliced kalamata olives
1.5 cupswhite beans; canned is fine, but drained
3 tbspCapers
1 cupfresh curly parsley; minced
1 salt and pepper; to taste

Fresh Crisp Calamari Salad Preparation

Rinse and drain calamari rings.

In a saute pan, with an inch of water, poach rings until just firm.

Mix remaining ingredients into a non metal bowl. Toss in poached and drained calamari rings. Toss until well blended. Chill for up to 8 hours or over night.

Serve with fresh crusty Italian bread and an ice cold Pinot Grigio.
