| 1 lbCalamari; cleaned and cut into rings |
| 0.25 cupgood cold pressed olive oil |
| 0.25 cupfresh squeezed lemon juice |
| 2 clovesgarlic; diced or crushed |
| 1/4 red onion; diced |
| 1 red tomato; diced |
| 1/2 cupsliced kalamata olives |
| 1.5 cupswhite beans; canned is fine, but drained |
| 3 tbspCapers |
| 1 cupfresh curly parsley; minced |
| 1 salt and pepper; to taste |
Fresh Crisp Calamari Salad Preparation
Rinse and drain calamari rings.
In a saute pan, with an inch of water, poach rings until just firm.
Mix remaining ingredients into a non metal bowl. Toss in poached and drained calamari rings. Toss until well blended. Chill for up to 8 hours or over night.
Serve with fresh crusty Italian bread and an ice cold Pinot Grigio.
