White Bean Salad with Roasted Red Pepper and Fennel Preparation
Mix together the beans, roasted pepper, fennel, basil, scallions, and parsley in a medium
bowl.
Whisk together the extra-virgin olive oil, lemon juice, minced garlic, salt, and black
pepper in a small bowl. Pour the dressing over the beans.
