Meatloaf recipes are as varied as the cooks who make them. My Aunt Evelyn's version is easy to make, delicious, and laced with shredded cheese. She would often vary the type of cheese used. Her favorite was cheddar, mine was pepper jack, my Uncle Victor liked swiss, but other cheeses or cheese combinations often appeared and made for subtle and tasty differences.

diam17ond ,Delicious! I've never made meatloaf, but this is way better than I remember my mom's to be. The only thing I did different was to add extra veggies-- 2 shredded carrots and a few mushrooms. The sauce is great and almost crystallized in parts on the top. So good.
rochellelafoon ,LOVED this meatloaf!! I will definitely be making this again!!! I used 94/6 ground round instead of ground chuck. Goes well with mashed potatoes and garlicky green beans!! I know what I'm eating for lunch tmw and it's not a turkey sandwich :)
