Cous cous with sauteed vegetables and a fried egg over a bed of greens, healthy and filling

| 1/4 cbutter |
| 1 cupcous cous |
| 1 1/4 cupWater |
| 1 onion; (I used about 1/4 of an onion amt depends on servings) chopped |
| 2 clovesgarlic |
| 1 tomato |
| 1 pinchfresh parsley, basil, and chives |
| 1 Salt |
| 1 pepper |
| 1 onion powder |
| 1 garlic powder |
| 1 balsamic vinegar |
Cous Cous with saute'd Vegetables and Fried Egg Preparation
Prepare cous cous and let sit
In a frying pan, use 1/2 of the 1/4 cup of butter and saute onions and garlic until brown
add sliced tomato and the rest of the butter
Add fresh herbs, salt and pepper, (season for taste as you wish)
combine couscous into pan with vegetables
stir in about 3 tablespoons of Balsamic vinegar (may need more, but you don't want to overpower it)
mix together and add garlic and onion powder, just a pinch
plate over a bed of lettuce, preferably dark leaf lettuce or spinach lettuce
in pan, fry one egg (1 egg per serving) over easy
place on top of couscous and serve
