Boston Butt Roast with Gravy
This is a great way to cook a Bostone butt roast. Very easy and it makes a wonderful gravy that is terrific with homemade mashed potatos. My teenage boys love this!

| 1 1/2 tablespoonsalt |
| 1/2 tablespoonItalian seasonings |
| 1 teaspoonGarlic powder |
| 1 teaspoonpepper |
| 6 tablespoonall purpose flour |
| 2 cupswater |
| 1/4 cupwhite vinegar |
| 1 onion; chopped |
| 1/4 cuphot sauce |
| 2 tablespoonbutter |
| 1 cupbeef broth |
| 1/4 cupred wine |
| 1/2 teaspoonItalian seasoning |
Boston Butt Roast with Gravy Preparation
Place roast in a large roasting pan. Sprinkle pork evenly with 1 1/2 tablespoons salt and next 3 ingredients. Sprinkle evenly with 4 tablespoons floor. Pour 2 cups water and vinegar into roasting pan. Add onion and drizzle pork evenly with hot sauce. Bake at 375 for 3 1/2 hours or until tender. Remove pork from roasting pan and wrap in aluminum foil. Pour about 1 cup pan drippings into a 2 cup glass measuring cup. Let stand for 10 minutes and skim fat from drippings. Melt butter in large skillet over medium heat; whisk in remaining 2 tablespoons floor, pan drippings, broth, wine, and 1/2 teaspoon Italian seasonings. Bring to a boil, whisking constantly; reduce heat to medium, and simmer 10 minutes. Season with salt and pepper to taste. Serve gravy over sliced pork.
