An awesome Mexican side dish when made from scratch, authentic Mexican recipe

"I could not believe how spicy these beans were! They were tasty and everyone enjoyed them, but you may want to adjust the seasonings to suit your own taste. Pretty simple to make in large batches as well. We tripled the recipe and fed about 40 with it."

Ingredients

Are you making this? 
2 tablespoons olive oil
1 Onion; chopped
4 cloves garlic
4 cups pinto beans; cooked
1 cup chicken broth
1/2 tsp cayenne ppepper
3/4 tsp seasoning salt
1 Juice of half a lemon
1/2 cup cheddar cheese; grated
1 tsp of Cumin

Original recipe makes 6

Servings  

Preparation

In a large pan, saute onion and garlic

In a seperate bowl add 1/3 of the beans and mash the beans with the back of a spoon until smooth.

Add 1/3 of the chicken broth to the bean mixture and add more beans, mash until smooth repeat process

Slowly add bean mixture to the large pan. Add cayenne pepper, salt and lemon juice.

Simmer and add grated cheese

too much cayenne pepper, and i used a potato masher instead of a spoon to mush the beans. it saved loooads of time..super delicious though!!

Great as a side dish for tamales, too! I added my own spices to taste.
