| 2 Chipotle Peppers in Adobo |
| 0.5 cupred wine |
| Sauteed Vegetables |
| 1 teaspoonolive oil |
| 1 Onion |
| 1 Green Pepper |
| 1 Red Pepper |
| Guacamole Salad: |
| 8 servings |
| 1 mediumAvocado; coarsely mashed |
| 0.25 cupFat Free Sour Cream |
| 2 tablespoonsFresh Lime Juice |
| 1 teaspoonDijon Mustard |
| 0.5 teaspoonHot Sauce |
| 0.5 teaspoonSalt |
| 0.25 teaspoonCumin |
| 2 tablespoonFresh Cilantro; chopped |
Carne Asada with Sauteed Vegetables and Guacamole Salad Preparation
Carne Asada
Combine ingredients in a blender and marinade steak in a sealed bag at least 30 minutes.
Grill, or pan fry in oil, about 5 minutes a side, until internal temperature reaches 145F. Let rest 5 minutes before slicing.
Vegetables
Thinly slice veggies into rings. Heat oil over medium-high heat and saute while meat rests.
Guacamole Salad
Combine ingredients in a bowl while meat marinades, chill. Serve over shredded lettuce with chopped tomato.
