Bobby's Baked Chicken with Dijon & Lime
| 3 1/2 poundsChicken; pre-cut into 8 pieces |
| 3 tbsDijon mustard |
| 1 tablespoonMayonnaise |
| 1 cloveGarlic; minced |
| 1 eaLime juice and zest; finely grated |
| 3/4 teaspoonPepper |
| 1/4 cupSalt |
| 1 eaParsley; chopped for garnish |
Bobby's Baked Chicken with Dijon & Lime Preparation
Preheat oven to 400 degrees. Rinse chicken and pat dry; place in large bowl. In a small bowl, whisk together the mustard, mayonnaise, garlic, lime zest and juice, and pepper. Season the chicken generously with salt. Pour the mustard-mayo mixture over the chicken, tossing well to coat.
In large baking pan, arrange the chicken to fit in a single layer. Bake until it is cooked through; breasts will take about 30 minutes, and legs will need 5 to 10 minutes more.
Serve the chicken with the pan juices drizzled over the top and garnish with chopped parsley. If desired, sprinkes a littlem more lime zest on chicken as a garnish.
