Delicious recipe. Take a while to make; however, it is not hard. Great for leftovers.
"Wow!! This was better at home than at the Thai restaurants... And probably healthier too, it tasted so good. I made enough sweet and sour sauce to save some. :) I couldn't believe I made it; it was THAT GOOD. Cant wait to make more of the sauce, I'm planning on making my own crab wontons soon."

Ingredients
| 4 teaspoonvegetable oil |
| 1 1/4 poundschicken breasts |
| 2 onions; coarsely chopped |
| 2 red bell pepper; seeded - and sliced |
| 2 tablespooncornstarch |
| 16 ouncescanned Pineapple chunks |
| 1 cupBrown sugar |
| 2 tablespoonSoy sauce |
| 1 cuprice vinegar |
| 1 cuptomato sauce |
| 12 cupsrice; cooked |
Sweet and Sour Chicken Preparation
Heat oil in a large skillet, add chicken, onion and pepper strips and stir fry for about 5 minutes. Remove and keep warm. Mix cornstarch, pineapple juice, brown sugar, soy sauce, vinegar and tomato sauce in a small bowl, then add to skillet. Reduce heat and simmer until sauce thickens. Add chicken mixture back to pan, add pineapple chunks and heat through. Serve over rice.
