"I liked that this recipe was different. My kids loved it! I personally could have used more flavor. I think next time I make it I'll add some Worcestershire, beef bouillon, Dijon mustard and maybe more Italian seasoning. I think I'd even try some Horseradish! It just lacked a zip to it. | 2 poundsground beef |
| 1/2 cupItalian bread crumbs |
| 1/4 cuponions; minced |
| 1/4 cupcelery; minced |
| 2 tbspgreen bell peppers; tbsps |
| 2 tbspred bell peppers; tbsps |
| 1 tablespoonGarlic; minced |
| 2 tbspgreen onions; sliced |
| 2 tbspparsley; chopped |
| 2 Eggs |
| 1 1/2 tspsalt |
| 1 1/2 tspblack pepper |
| 2 cupsCheddar cheese; shredded |
| 1/2 cupbacon; cooked and crumbled |
Chef John Folse's Bacon Cheeseburger Meatloaf Preparation
METHOD:
Preheat oven to 350F. In a large mixing bowl, combine beef, bread crumbs, onions, celery, bell peppers, garlic, green onions, parsley, eggs, salt and pepper. Mix well. On a piece of wax paper, shape meat mixture into a ?-inch thick rectangle. Spread cheese over the meat, leaving a ?-inch border around the edges. Sprinkle bacon over cheese. Roll the meat in a jellyroll fashion to enclose the filling and form a pinwheel loaf. Press both ends to enclose the cheese. Place in a 10? x 15? baking dish and bake for 1 hour or until internal temperature reaches 160F. Once baked, sprinkle with additional cheese or ketchup and mustard. Any leftovers make great sandwiches for the next day.
