I think next time I make it I'll add some Worcestershire, beef bouillon, Dijon mustard and maybe more Italian seasoning. I think I'd even try some Horseradish! It just lacked a zip to it. INGREDIENTS:
2 poundsground beef
1/2 cupItalian bread crumbs
1/4 cuponions; minced
1/4 cupcelery; minced
2 tbspgreen bell peppers; tbsps
2 tbspred bell peppers; tbsps
1 tablespoonGarlic; minced
2 tbspgreen onions; sliced
2 tbspparsley; chopped
2 Eggs
1 1/2 tspsalt
1 1/2 tspblack pepper
2 cupsCheddar cheese; shredded
1/2 cupbacon; cooked and crumbled

Chef John Folse's Bacon Cheeseburger Meatloaf Preparation

METHOD:

Preheat oven to 350F. In a large mixing bowl, combine beef, bread crumbs, onions, celery, bell peppers, garlic, green onions, parsley, eggs, salt and pepper. Mix well. On a piece of wax paper, shape meat mixture into a ?-inch thick rectangle. Spread cheese over the meat, leaving a ?-inch border around the edges. Sprinkle bacon over cheese. Roll the meat in a jellyroll fashion to enclose the filling and form a pinwheel loaf. Press both ends to enclose the cheese. Place in a 10? x 15? baking dish and bake for 1 hour or until internal temperature reaches 160F. Once baked, sprinkle with additional cheese or ketchup and mustard. Any leftovers make great sandwiches for the next day.

I have to admit, I am that person that has to put my own twist on every recipe so here it goes: instead of the two types of bell peppers, I just used one large fire roasted red bell pepper from a jar and I added seasoned salt in stead of regular salt. Also to the meat I added 1 package of dry onion soup mix. The best part was the topping I made. I used about a 1/4 cup of ketchup, 1 1/2 Tbsp of brown sugar, 1 tsp of molasses, a couple splashes of Worcestershire sauce and apple cider vinegar, 1 Tbsp of diced dill pickles, and a teaspoon of dill. In hindsight it was a little sweet so I could have put 2 tsp of prepared yellow mustard or 1 tsp of dry mustard, but it was very good without it if you like a little sweetness. Also, I should have seasoned the bacon when it was cooking with a little ancho chili powder.

Great meatloaf! Instead of plain salt and pepper, I added Cajun seasoning (eye-balled it).

Had the neighbors over for dinner, and this was a huge hit. Delicious. Will definitely make this a regular menu item. Great recipe. Served with sourdough thick crust chewy bread, and my corn casserole I'll put in the recipe area.

Great recipe. I substituted cream cheese for cheddar and rolled oats for bread crumbs - also was out of eggs so none of that. It was delicious - my husband asked me to make it again

This is a good recipe. For a little more kick try a little chili powder mixed in with ketchup on top while cooking
