This is a great cheese dip for the football season. It can be easily tweaked to fit your level of "hot".

Tennessee Cheese Dip Preparation
Place entire roll of sausage into frying pan. Break up with wooden spoon and crumble as you fry it. In the meantime, cut the velveeta cheese up into one inch cubes. Place the cheese in a microwaveable bowl and heat until entirely melted. When cheese has completely melted, open can of rotel and mix into cheese. Remove sausage from stove and drain. When sausage has thoroughly drained, mix into cheese. Stir all contents thoroughly, and serve with your favorite chip just prior to kick-off!
